There was some dude who used the Tribes networking model (still really the gold standard for this kind of thing) here: https://gitlab.com/Juankz/realtime-network-sync-godot but I haven't tried it out.
https://github.com/godotengine/godot/pull/37200 is also really exciting. If it gets approved for Godot 4 it seems like Godot will have better networking built in.
If you're into C# there's also a prerolled project here: https://github.com/DoubleDeez/MDFramework that seems to do a lot of what you probably already have going using GDScript but that (IIRC) has a scene rewinder.
Use lawnjelly's smoothing-addon for physics interpolation.
