Not forks. The whole code for Proton is in and its submodules. There are many game-specific patches, i.e., patches that were more or less explicitly included to make one specific game (or a few games) work better.

There are also some instances of game-specific behaviour: Proton detects at runtime which game is running and decides whether to enable or not some code. This is done for the most filthy hacks that are required to run something, but risk to spoil some other program. Search the code for instances of getenv("SteamAppId") or getenv("SteamGameId").

You absolutely can play Steam games on NTFS and share them with Windows, I used to do so. For questions, see FAQ. For the most part, you want compatdata and common/Proton to be on your Linux drive, at least, and symlink them. After that in my experience it should all just work. Although now I've fully moved to Linux and don't need to do so so my method could be a bit out of date.

Make sure the Proton binary itself is not on an NTFS partition. You can move the Proton binary to your ext4 partition by using Steam's built in moving tool. Proton doesn't work if the binary itself and the wineprefix is on an NTFS partition. The game files can be on an NTFS partition though no problem. Check this for more information

However, if you are ready to take the risk of losing data and to avoid reporting bugs that are clearly filesystem-related, you can refer yourself to the official wiki: Be aware that not long ago, this was not supported nor encouraged.
