Shutdown Ubuntu when server inactive?
The itzg/minecraft-server docker container has an option ENABLE_AUTOPAUSE that suspends the Java process when nobody is online then resumes it when someone attempts to connect.

Securing my home server
If all you're running is a Minecraft server you don't need to worry about the http part. Just open those ports. For added system isolation, run Minecraft containerized from a minimal docker image. Something like this: https://hub.docker.com/r/itzg/minecraft-server

Other then that honestly you can just try it and see. If it works for what your doing and your workload then go for it, but dont expect the best results. As for guides, i dont personally know of any. But if you can find a way to run docker on the raspberry that would probably be your easiest way with something like itzg/minecraft's image

How to start server as a daemon rather than manually starting?
I would personally just convert the server to a docker container; it'll allow you to do that with a flag --restart=unless_stopped its also really good for security and overall a good practice. Maybe do that instead? Heres the docs if you need it.
