Regarding the Minecraft issue:
If a Minecraft Java server has the special Geyser plugin ( https://geysermc.org/ ), Minecraft Bedrock clients can connect to it, so you can stick to Minecraft Java on Linux and still play together with your kids who are on Minecraft Bedrock on their iPads.

i've got possible good news for you then, there seems to be a project that adds a translation layer between the two server protocols[0]. it seems to have limitations dealing with the different quirks and features that differ between both games[1], but it looks like everything else works fine. you could try that out if you find it to be a better option than wrangling with windows updates
as for VR, there's a third party mod for java[2], i tried it a couple years back and it felt pretty smooth, had no issues with it, but i don't have a point of reference to compare it to bedrock VR because i never tried it

Apple Needs a Snow Sequoia
I'm talking about network compatibility, so that a Bedrock client can join a Java server and vice versa. It's clearly somewhat possible because GeyserMC[1] exists. It's just ridiculous that it's a third-party addon.

A Minecraft server written in COBOL
There are extensions/plug-ins to the standard Java server, allowing Bedrock players, and xbox accounts to join:

(Plus Floodgate so they don't need a Java account)
I just setup a new family minecraft server last week and have successfully hosted java and bedrock players simultaneously (one coming in from a Nintendo switch, another from their phone and several from Java clients).
There are also plug-ins allowing older (or newer) client versions to connect to your server as well (ViaVersion, ViaBackwards).

She plays bedrock edition on her iPad. MacOS only supports Java edition. You need something like Geyser to play together or use software like Parallels to install windows on your Mac so you can play bedrock.
