I've since moved to manually writing the scripts using Legendary but I'm also a massive nerd so if you're still interested in touching grass, option 1 is probably the best.

Personally I use legendary which is basically just a super-lightweight commandline launcher that also handles stuff like setting up wine if running on linux. But if you don't want quite that bare-bones, there's also a couple of GUI wrappers: rare is a fairly lightweight native app that feels pretty snappy, though it can be a bit unpolished in places, and heroic, which is an electron app and so a bit more heavyweight. but more of a direct drop-in replacement.

Does anyone else avoid playing their rockstar or ubisoft games due to how long the launcher takes? call me spoiled but I play mostly offline single player campaigns where Im back in the action within 30 seconds of clicking the game icon.

Playing games offline isn't easily possible in Epic Games launcher
There's a decent amount ofDRM free games on Epic were if you find the .exe of the game you just launch it from that. Also try the open source command line launcher Legendary which has offline mode

Initial impressions are that it's a bit more difficult to install games from Epic and GOG than I was hoping - i.e. both launchers list as installs/will-not-run. Currently downloading the offline-install files for the GOG game I was hoping to get running, and guess I'll have to figure out how to install via something like Legendary or Heroic in combo with Codeweavers wine - had been hoping that was better integrated than it appears to be at initial glance.

If anyone's looking for a cool way to organize their game library then I highly recommend this launcher. It's called Playnite, It's packed with features,highly customizable with lots of themes and It is open-source and free.
You can also set launch parameters, so clicking on an emulated game triggers the correct emulator without fuss. You can also run Legendary to avoid the shite experience from Epic launcher.
