glTF sets the cull mode for materials to Disabled by default, which is likely what causes the issue here. I opened an issue on GitHub to track this: https://github.com/godotengine/godot/issues/54209
This is what Reverse Cull Face resolves – it's already available since Godot 3.0. See the documentation PR I opened :)
