as for how to do things, try to make games with your engines to find out if your ideas work well. and find books online such as game engine gems 1 2 & 3 and game engine architecture 3rd edition. websites such as https://learnopengl.com help as well. but to rly build a large scale engine, you need other people. I focus on general architecture, design, and cpu side code. for physics i have my physics programmer, for graphics i have my graphics programmer, and to help me with miscellaneous tasks i have an extra core engine programmer as well.
