Using and Addon I found on github yesterday I booted up an old project and got my FPV controller plugged in, worked first try I was so surprised.

Does anyone know dynamics model of gym environments?
They don't provide them. You will need to look into the code and derive them yourself. Alternatively, a recent gym environment attempts to provide symbolic models using CasADi, but is currently limited to only a couple of environments.
