FPV drone using Raspberry Pi
In short, you can use serial from the RPI to send MSP commands, that allow read telemetry as well to drive the drone. Have look at this project.

Drone guided by a PC
I'm working on a very similar project. You can control it by MSP. See this repo as an example.

Is GPS Mapping possible?
If your control link supports telemetry and your controller supports USB VCP or some other form of data output, you could plug your TX into your computer and run software like mwptools or similar.

Ground Control Station. Old second hand mini Windows laptop for only 40€ with Linux Mint Xfce OS, running perfectly MWPTools (Stronnag) mirroring the telemetry of the TX16S with EdgeTX via USB serial. It works! 😃
It's easy, you just need a USB cable to the transmitter, MWPtools from Stonnag and mirror the INAV telemetry via USB in EdgeTX firmware. https://github.com/stronnag/mwptools
What are some alternatives?
ESP32 - DroneBridge for ESP32. A transparent short range wifi based telemetry (serial to WiFi) link. Support for MAVLink, MSP, LTM (iNAV) or any other protocol
msp-osd - MSP DisplayPort OSD
MissionPlanner - Mission Planner Ground Control Station for ArduPilot (c# .net)
LuaTelemetry - FrSky SmartPort(S.Port), D-series, F.Port and TBS Crossfire telemetry on all Taranis and Horus transmitters

Replay - [WIP] Explore and watch your favorite videos
PteraSoftware - Ptera Software is a fast, easy-to-use, and open-source software package for analyzing flapping-wing flight.
DroneBridge - DroneBridge is a system based on the WifiBroadcast approach. A bidirectional digital radio link between two endpoints is established using standard WiFi hardware and a custom protocol. DroneBridge is optimized for use in UAV applications and is a complete system. It is intended be a real alternative to other similar systems, such as DJI Lightbridge or OcuSync.
UbiOne - RPI HAT that combines a STM32F411, sensors and a Mini-PCIe socket for LTE connectivity
vJoySerialFeeder - Feed Virtual Joystick driver with data from a serial port
