For Steam games / Proton, protontricks is your friend. Do not use WINE tools / winetricks from a "foreign" WINE install on Proton prefixes.

Recommend me a Distro to go back into Linux.
Nobara is Fedora but with a lot of modification to make it gaming and content creation ready (such as kernel modded for gaming and easy davinci resolve setup) headed by the creator of Proton-GE. While I have my issues with Fedora and I would also recommend risiOS since they're more Fedora-newbie friendly (while having a toggle to enable a lot of what Nobara adds), it's still a distro worth looking into because it fulfills a niche and it fulfills it well.

30 questions from a one week Linux user
Go with the most recent / experimental most of the time, you can set this globally in the settings menu (I use experimental, personally.) If the reports on ProtonDB say to use a specific version, and the game isn't working for you, then try that version. You might also want to check out proton-ge which can help with certain games.

random crashes on linux-proton
Going back is trivial, you go to https://github.com/GloriousEggroll/proton-ge-custom/releases and download the .tar.gz for whichever version you want, extract it in ~/.local/share/Steam/compatibilitytools.d and that's it. I never knew there's a GUI for that, it's probably less convenient than mc ;) Restart Steam to refresh the list of Proton versions stored there and you can go to QC's settings->compatibility and pick which version it runs with.
If everything worked fine with DXVK_ASYNC maybe try using Proton-GE 7-44 as it's the last one that still has it. https://github.com/GloriousEggroll/proton-ge-custom/releases/tag/GE-Proton7-44
