Voice Recognition?
As an experienced web developer I'm sure you have online searched this before and found this module. I have not tested it but it should work fine with Godot 3.2.3, judging by the discussions on it's Github issues.

Unreal vs. Unity Opinion
Absolutely. I actually compiled my own version of Godot in order to enable a speech-to-text module (https://github.com/menip/godot_speech_to_text) for a project. While some might see that an overly arcane technical annoyance, the fact I was able to do so just shows the promise of a powerful open-source libre engine.

Someone here : https://github.com/touilleMan/godot-python is working on support for Python in Godot. Didn't try, your mileage may vary.

Incidentally, Godot can use Python, but it's not officially supported, not well documented, and better avoided as a beginner.

I think there are even some efforts to make Python usable in Godot 4 (https://github.com/touilleMan/godot-python) so if I needed a specific library or something I think you can simply do an script with Python and all the rest in GDScript? But we will see.
