I want to turn sprites into flat 3d models to cast shadows, lighting and stuff. Is there already a solution for this?

3d - What to use for level geometry / design?
If you don't want to code from scratch, for voxels I'd use https://github.com/98teg/SpriteMesh while for more complex stuff https://github.com/jarneson/godot-ply is great (for 3.x only, 4.x not yet supported). Godot-ply is already very close to e.g. Unity ProBuilder.

Voxel Animation in Godot
Totally, Godot can and has been used to create voxel content many times. A quick Google search for "Godot voxels" shows multiple resources on making voxels with Godot. There are even open source add-ons you can use to get started faster, the first two that popup on results are "Voxel-Core"(https://github.com/ClarkThyLord/Voxel-Core) and "godot_voxel"(https://github.com/Zylann/godot_voxel)

Wanting to procedurally generate terrain that looks "Voxel-ey", but is not actually made up of individual voxels.
take a look at the Voxel-Core plugin here: https://github.com/ClarkThyLord/Voxel-Core From the looks of it it can load up or edit a voxel model, and render it as a mesh produced by greedy meshing (optimizing the outer bound of the voxels into a simplified singular mesh.)
