If I want to switch to exporting/creating video files with an alternative, royalty-free codec, and be able to do everything I was doing with H.264/265 in pretty much the same way (except with older programs and sites that don't support this uploading videos with this codec), which one should I use?
You could implement that in your software through FFmpeg's x264 encoder. It's FOSS, and all the code is on Github.

All other functionality is provided by open-source software projects. The total software storage footprint is less than 100 MB. During the 7-minute EDL sequence, the EDLCAM system is expected to generate and store more than 40 GB of camera and microphone data.
