So where do I begin?
Brogue and Dungeon Crawl as others have mentioned, and for a good reason. Both are really friendly to start with (considering how cruel they are) and are easily playable without having to dick about settings and such.

Which are the best variants/forks for Brogue?
Check out RapidBrogue -- nowadays I prefer it over the classic (including the CE version which is recommended over Pender's original because of bugfixes and smart adjustments). It gives a much more condensed experience which at first will feel terribly scary, overwhelming and unfair, but because it's so fast, starting a new adventure doesn't feel like you've wasted your time earlier.

Hades is the best-designed roguelike I've ever played
To start, I would recommend Brogue or The Ground Gives Way. Both are very simplified and have an accessible, modern approach. Tales of Maj'Eyal, while more complex, also a more modern game feel to it that might be appealing. There are two main types of roguelike gameplay: dungeon delvers, and expansive open worlds. Both Brogue and TGGW are the former, so it's easy to jump into a game, get the basic idea, and get some neat loot before you're murdered so you get a feel for the mechanics (some of the older games don't care about killing you on the first turn some runs). TGGW also has a tutorial, which isn't common. And they're both free.

anybody up for packaging Brogue for the miyoo? it's a very cool and modern roguelike that already runs on linux
Looks like it already runs on linux and the only dependency is SDL, same as all the other miyoo ports. Unfortunately I know nothing of linux compiling or ports packaging for the miyoo, anybody up for it? Here's the repo: https://github.com/tmewett/BrogueCE
