For Office via VM, I've generally run with fmstrat's WinApps for better integration but apparently Cassowary is the new one that is more actively developed (including an auto-suspend feature). Cassowary said they coulld integrated with both virt-manager and VMWare, though the latter don't have the auto-suspend integration. They both include an instruction on creating a VM for their setup.

Generally, outside of GPU usage (barring GPU-Passthrough), QEMU/kvm works better for performance. If you want to try QEMU/kvm with less hassle, Gnome Boxes and quickemu would be easier to setup but I prefer just using virt-manager directly.
