I successfully install macOS Monterey in an i3 8100 and UHD 630 Hackintosh following the Dortania OpenCore Install Guide (https://dortania.github.io/OpenCore-Install-Guide/). However, patience and determination were key to making it work
I found two solutions. The first is a kext named "BlueToolFixup.kext" (https://github.com/acidanthera/BrcmPatchRAM) to make the UB400 work on higher versions. The second solution is a program that makes wireless USB adapters functional even though no drivers were available from the manufacturer (https://github.com/chris1111/Wireless-USB-OC-Big-Sur-Adapter/releases/tag/V16).

Once I added the "BlueToolFixup.kext" in the EFI folder (using MountEFI: https://github.com/corpnewt/MountEFI), it was time to update from macOS Catalina to Monterey. The update process was successful, and after disabling SIP (as instructed by chris1111 -author of Wireless-USB-BigSur-Adapter-.), everything worked fine.
