You can use the Plex API to bulk lock/unlock fields, including posters. It looks like this script that utilizes Python-PlexAPI should make it fairly easy if you're familiar with running Python scripts.
I've started learning to use ExifTool which is definitely overkill for my needs, but it handles virtually any media file/container type that allows metadata, and it lets you manage any metadata related function I can imagine a need for.
