Thank you very much! Didn't realise they did a community edition. I'm finding 11.9.6esr and 12.3.1 look like my best bets.

But if you want to avoid installing a full-blown Windows server, I suggest to create a Linux server and install Samba + WSUS-Offline on it: https://gitlab.com/wsusoffline/wsusoffline We've been running that for years to update dozens of Windows workstations and couple of Windows servers too. It's a bit difficult to setup, but after that it has been running smoothly, and all the updates are installed just fine (whenever we release them to be installed). It even supports Windows 11. Samba is used to provide the actual update packages (client machines are mapping that as a network drive whenever they're installing new updates).

MacOS like WINE
There is actually a Wine-like transplier called Darling. The problem is that development is very slow because there is not as much need for MacOS programs on Linux, and there is a huge shortage of volunteers and manpower. And it has been rendered almost obsolete because Apple moved to ARM. Additionally 90% of Apple's API is closed source despite Apple claiming to champion open source.

Unfortunately not. Darling [0] is still at the point that it can only run command line applications. Only the most basic GUI applications are supported. That's still a massive accomplishment that I don't want to diminish, but it's nowhere near the point that WINE was at even quite a long time ago.
