install Epic Store games and add to steam automatically?
I've used steamsync on Windows to auto add all my Epic (and itch and Gamepass) games to Steam, but it was an extra step after installing. Since these Legendary GUIs are already doing some custom work, I'd expect they could do that extra hookup for me. Looks like BoilR could also handle it if steamsync doesn't work in Linux. I'm not sure if I'm missing something or if no one has connected these things together to make the process seamless yet.

What controller should i buy to play exclusively on PC?
You can launch Epic games through steam (steamsync automates adding them) and usually Steam's extra gamepad support applies (unless it requires Epic online services). I haven't tried the PS5 gamepad with other stores yet.

Can’t play epic games on steam link
If you add non-Steam Epic games straight, controllers will act like keyboard and mouse. Many people using OSOL to add Epic games to Steam, but it never works for me. Gyro is going to to revitalize my interest for all FPS games
For GTA V (I have the "Epic Store" version), I just added the "Rockstar Launcher" as a "Non-steam game" and it worked with no issues. I had to use GloSC for Genshin Impact and other games.

Change Steam Link keybindings?
I had an issue where my PC viewed the backbone as keyboard inputs, so I had to use this GitHub project and it works flawlessly now. https://github.com/Alia5/GloSC I just do a blank one, not linked to any games, and launch it on my PC via Steam before I plan on streaming on my phone.

Y:LD Controller problem on Xbox Game Pass PC
You could try this https://github.com/csutorasa/XOutput that seems to work like xc360 but works with UWP, or maybe https://alia5.github.io/GloSC/, to open UWP apps trough steam and use the steam controler interface to assign the buttons.

When I run Death Stranding from Epic Games via Steam to use the controller my save isn't there.
I mean the SC is not tied to Steam. Lots of games I play with the SC I start as a non-steam game from Steam and it works fine. Also https://alia5.github.io/GloSC/

New Solution to get a controller to work on other launcher's games (Origin, Epic, etc.)
I just setup Steam link for the first time, and was disappointed to find that when I launched an Origin game, my controller would default to it's Desktop Mode inputs. Same thing happened for an Epic game. I've seen people suggest various third party software (OSOL, GloSC), but what I did was remap Desktop Mode so that instead of RT being click, LT right click, LS the mouse cusor, etc...... RT was RT, LT was LT, LS was LS, A was A, B was B, and so on.
