How can i Edit .MWM Files?
SE Utilities is designed to make that process a lot easier, and has tutorials on how to get models into/out of Blender in formats SE can use.

Looking for Advice on a Dedicated Server
Heya! I'm surprised no one's written to you. A simple interface would be using Torch to manage the server. They have a Discord for help as well. Here's a link to their GitHub page.
