Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Workflow for early research projects in your organization?
At the institute I work at intermediate results are also often not documented. It is sometimes even worse than you described so that the researcher have difficulties to reproduce their own work. Therefore they hired me to develop shournal in order to have at least some safety net to reconstruct command-line work on the shell. Maybe it can help your team too? https://github.com/tycho-kirchner/shournal

Looking into writing a CAN stack with FreeRTOS for STM32, where should I start?
Not sure what STM32 CAN peripherals you are talking about (bxCAN vs FDCAN) but if you are using bxCAN, I recommend looking at UAVCAN's implementation: https://github.com/UAVCAN/platform_specific_components since it is very simple to use (even though it claimed works with libcanard stack only but should be fine for outside purposes). I think putting RTOS on it should be simple enough. For FDCAN, the only options right now are from ST HAL or ChibiOS AFAIK.
What are some alternatives?

cookiecutter-data-science - A logical, reasonably standardized, but flexible project structure for doing and sharing data science work.
stm32-bootloader - Customizable Bootloader for STM32 microcontrollers. This example demonstrates how to perform in-application-programming of a firmware located on an external SD card with FAT32 file system.
NSudo - [Deprecated, work in progress alternative: https://github.com/M2Team/NanaRun] Series of System Administration Tools
