Question: I'd love to play all the Ultimas again. Realistically, what's the best way to do it?
Ultima 6 - I use ScummVM to play it. It's a great engine that provides a layer of UI compatibility over the game.

Piracy and... McCarthyism?
The game is "Beneath A Steel Sky", an old school point and click adventure. And though the graphics are pixel style, they are still very well done, and the game and story are still great. The emulator is ScummVM. There's some other games that were released as freeware.

How to Get and Run Rolypolys 2
ScummVM, which has been working on Adobe Director support, can detect the game (thank you @mistydemeo <3), but trying to run it will softlock you on the game's title screen, unable to click anything. It's likely this will be fixed in the future, but for now I can't recommend it for this particular game.

DOSBox is free. You can probably run GOLF.COM and that should run it. You can also try running DESIGN.COM, although I would guess that allows you to design either miniature golf courses, or golf courses.

Notably, unlike Rolypolys 1, you cannot run it in DOSbox. This is because the game is a 32-bit executable, and 32-bit support was simply not present in Windows 3.1, the latest stable Windows version that can be run in DOSbox.
