What does modern (good) API development look like and what are the best tools to use?
Contrary to the direction most people go, I've been writing REST APIs as C++ servers using two different fairly full featured C++ REST frameworks: first using https://github.com/Corvusoft/restbed and more lately using https://github.com/Stiffstream/restinio. These can be peers with any other server, while living on embedded and/or high compute devices for video encode/decode/analysis, deployed ML models, encryption for and remote process communications, model data collection and similar expensive or in-field processing. In both high compute and in-field-no-internet situations creating REST APIs in C++ enables speed and system controls not present in the majority of the mainstream REST frameworks. If you need an embedded C++ HTTP server then there are plenty of libraries/frameworks (in random order): Crow, RESTinio, Boost.Beast, cpp-httplib, http_backend, Pistache, RestBed, served, proxygen, Simple-Web-Server, drogon, oat++.

https://en.cppreference.com/w/cpp/compiler_support says clang, gcc, and msvc all support it, though I don't know how recent those versions are off the top of my head.
In my understanding, with this specific feature, if you want a polyfill for older compilers, or to use some more cutting-edge features that haven't been standardized yet, https://github.com/fmtlib/fmt is available to you.

For processing strings, streams in C++ can be slow
{fmt} has internal buffering but it's not yet exposed to users. There is a feature request for it: https://github.com/fmtlib/fmt/issues/2354. FILE buffering is not too bad but it can be easily optimized: https://www.zverovich.net/2020/08/04/optimal-file-buffer-siz....

adoption of fmt based logging
Automatic use of operator<< when that exists was present in fmt until version 9.0.0. In version 9 you could use FMT_DEPRECATED_OSTREAM to opt in the old behaviour, but this too was removed in version 10.0.0. Now there is no way to automatically use operator<<.
