How have you Cord Cutters replaced your "Netlix style" feed/recommendations?
If you know basic python. You can use this script someone made that will pull playlists from trakt and IMDb right into Plex. I modified it a little so instead of making a playlist it adds a tag. Then I make a smart collection that I add to Plex home. It includes any movies (in Plex) that are in the top 50 IMDb most popular and top 50 most watched on trakt. It works well for me https://github.com/pbrink231/plex_top_playlists

Good recommendations service for trakt? (like couchmoney)
This is extra, but I also then use this https://github.com/pbrink231/plex_top_playlists to pull that new recommended list from trakt (that was pulled from couchmoney.tv) back to plex. So plex remains my front end where I keep my library and see my playlists and recommendations.

Jellyfin: The Free Software Media System
For live tv listings, there are companion apps like Ersatztv and Tunarr (easier to use than Ersatztv but less features) which feed into the live tv section in Jellyfin. You create 24/7 “tv stations” running whichever collection of local media files you wish to have in a “channel”. It’s great if you plop down and can’t decide what to watch, or want to replicate the look and feel of childhood cartsoon, right down to inserting 90s ads in between episodes.
You can use Ersatztv to create an automatically updated playlist, based on a Trakt or IMDB list. Back in the day, there was/is a a cool addon for Kodi called “PseudoLiveTV” and these apps replicate this functionality.
So you can have an always updated Christopher Nolan collection, Halloween movies, westerns, 24/7 90s cartoons, BBC nature documentaries or whatever.
You can pull any imaginable tv or movie list from Kometa using Ersatztv:

FlixPatrol has gone premium, any alternative for PlexMetaManager?
Digging into it more and more I discovered the FlixPatrol option to get the tops from the mainstream providers, and I know for sure this would be much appreciated among my users, as well as myself to be honest. I got very hyped by it, only to discover that due to a recent change of policy from FlixPatrol, support for it is being dropped.

Convenient way to enter a lot (100s of episodes) of TV metadata?

Yo Ho, Yo Ho, a pirates life for me!! Recent streaming services, prices and shows getting butchered, finally decided its time. Here's how a basic self-hosted 'Netflix' would look like. Fully automated once its setup. Using only a makeshift homelab server from second hand parts.
Plex-Meta-Manager: Handles collections and metadata for Plex.

Metadata question - what happens when you modify file locations or upgrade movie to a higher quality version?
You then want to make a single movie library that uses the /Movies path. That way when movies are "upgraded" you don't have to have that new library download new metadata. Plex natively doesn't have auto collection creation but you can use something like Plex Meta Manager. I'd try to figure it out using their wiki but if you can't or need help they seem to have a discord. Just quickly looking you can make collections by resolution so I assume there is some way to base it on audio type.

Best programs to use alongside Plex?
Plex Meta Manager (GitHub) for some automated library organization. This one has been a long process. It's a steep learning curve when you're first starting out, but my suggestion is to pick ONE feature and start there. That is, "I want a collection of the IMDb Top 250 Movies" and learn how to implement that, then move on to another feature you want to add. Currently, I have overlays for streaming services, audio quality, and video quality, plus collections for IMDb, award winners, filmmakers, actors, and production companies.
What are some alternatives?
