Any reason not to use the "Mirai" server software?
AlynaaMC is a mix of JettPack, Pufferfish, Paper and Yatopia (and you might want to read this, by the way, TL;DR: Yatopia is a buggy and unstable fork that is not even continued anymore)... Also, JettPack is just a playground for his dev so you definitely shouldn't use it at all.

Why do people not recommend Yatopia as minecraft server software?
Benchmarking server software is kinda difficult, and it really depends on what situation your server is running in. But an example is that our collision patches are MUCH faster than airplane and other forks (see here https://github.com/YatopiaMC/Yatopia/pull/458). But how our optimizations add up to affect your server really depends on a server-by-server basis. A standardized testing framework for server softwares is really needed!!

Most powerful Server Software
If you really need optimization and desperately crave performance, you can check out Yatopia. It's a really fast fork of Purpur (meaning it has Paper, Tuinity, Airplane and Purpur, and its own features), however it's a little bit less stable. Some people had issues with it, although I've never run into any.

What server engine renders chunks the fastest?
That’s a very detailed thread OP! I also suggest another server software called Yatopia MC, which is a fork (or flavour) of Tunity, but includes in a build of Purpur and the performance fixes of Paper. All plugins that work with Bukkit and his forks (Spigot, Paper etc.) will also work on Yatopia MC: and the best part? It includes optimisation mods like Starlight and other chunk loading efficiency mods. I recommend to see their GitHub if you feel a little bit Geeky and want to know the features of this server software!

School server
Right this is what you need to know: For 100 players you are going to need to have pretty decent specs, depending on your budget. For cheap but quality hosting look here WitherHosting and select the plan you can afford. From there you are going to need some optimised software. I would recommend something like Tunity or even YatopiaMC (this is what I use, Yatopia - Blazing-fast Minecraft. (yatopiamc.org) ). Once you have this, to allow everyone to join (bedrock and java) you are going to need to install GeyserMC (a bridge to allow bedrock players to join). From there also install Floodgate to allow bedrock players to connect without buying a java edition account. This may all seem very complex, but just look up a video on Youtube and you will find one thats easy to follow.

If you are really desperate for better performance, I suggest trying out Yatopia. It contains however more drastic optimizations that can noticeably change game behavior.

Whats your opinion on Cardboard, the fabric and bukkit bridge?
Could also pregenerate your world with chunky. To make it quicker add Starlight, Lithium, tic-tacs(This might be incompatible with some worldgen mods, but it massively speeds up terrain gen speeds if it works), and Carpet(use the "/tick freeze" command to freeze the game so there's more resources for terrain gen). Then switch to a paper style Tuinity server and set the worldborder to keep people from moving past pregenerated chunks.

On Server Software and Performance
Tuinity is a fork of Paper that includes optimizations that are generally tailored for servers with high player counts. It also includes Starlight: a complete rewrite of the lighting engine which greatly improves the speed of chunk generation. One benchmark has shown that Starlight can generate light 35x faster than vanilla.

For server jar I would recommend using Tuinity (or maybe even Purpur). As Tuinity has some more optimizations that help for larger servers and Purpur is a fork of it that I believe has even more experimental optimizations.
