Help with ideas on which package(s) for a small business collaboration system.
Try https://twake.app/ - chat and projects (with kanban view) integrated. There's more but it seems these 2 were important to you.
- Self hosted alternative to teams / slack, for file sharing and instant messaging?

There are so many Slack alternatives, can anyone recommend what you think is the best "slimmed down" option for a 3 person team? We only need direct messaging, voice chat, and message/channel logs. Not necessary, but would be nice: screen sharing and a shared task/to-do list area.
you can self host https://twake.app/ - looks good at a first glance.

Advice on project management and/or groupware service (calendar, tasks, chat, channels) for research project
My sense is that they're moving away from their own apps, based on the (poor and sporadic, tbh) communication from the dev team. I think the clearest indication I got was in this issue on github where the CTO states the documents, tasks and calendar apps that were largely baked in were going the way of the dodo.

40+ open-source projects to build your startup from project management to infrastructure
Thanks for sharing this. I was actually looking for this type of content as I am considering opening my own startup in the near future. I would suggest though the addition of Twake to the list. I stumpled upon it just yesterday. It is open source, GDPR compliant, has a free tier, can be self-hosted and has many useful features.

Self hosted house management for roommates?
I haven't tried this yet but it looks like a promising alternative for Nextcloud with a heavy focus on team and group share. It has calendars, task lists, a shared drive, and even a chat setup if you need it: https://twake.app/

New plans for self-hosted Zulip customers
It's funny because recently there was some drama around Rocket Chat with release 6.5.0. They introduced a new "free" tier in addition to the "community" version where the latter introduced a user limit of 25. During the upgrade to 6.5.0 existing Rocket installations also were switched to the new "free" tier and thus got the new user limit. It was possible to uncheck some boxes to get back to "community" but it caused a lot of confusion among Rocket users/admins.

Self hosting Rocket.chat
I'm considering switching from Matrix / Element to rocket.chat for a small instance (< 10 people) I host for my friends. However there is something during the setup process that gives me pause:
-
Answer honestly: How many of you are gradually moving away from Discord to alternatives and how are you handling it?
Depends on what do you exactly mean, but the obvious answers to this question are either: Revolt, Matrix(for instance, Element, etc.), Guilded, etc. I suppose rocket.chat and Slack could be considered as well.
