Cataclysm: There Is Still Hope
I don't know what launcher people use, but this file on this one defines the cdda repo urls: https://github.com/remyroy/CDDA-Game-Launcher/blob/master/cddagl/constants.py You could probably just changes that file to use tish urls.

New on the game
I highly recommend using a launcher, like the CDDA Launcher (which is not being updated anymore but still works well), or Catapult. These will not only launch the game, but will allow you to easily manage tilesets, soundpacks, save backups, etc.

Looking for single-player games like Kenshi, Project Zomboid, etc.
Also, the game is 100% free. Gets multiple experimental updates daily (open-source). And has a fairly extensive modding scene with multiple tileset options to play with. You can grab the launcher here and it will let you download everything you need to start messing around.

Idea: Two headed player species
However: https://github.com/kimjoy2002/crawl/blob/master/CHANGELOG.md "Added two-headed ogre(playable). Can wear 2 weapons and 2 amulets. But you can't wear a shield" - kimchi has two-headed ogres, but AFAIK they don't get two religions.

Roguelike with more depth than DCSS
It does an excellent job. The added content fits with the design philosophy the game had back when it was adding and trying out new things all the time. For example, Wights are playable and some of the most fun I've had with the game. Awful aptitudes in almost everything, but nice undead bonuses/resistances and the ability to curse their held weapon for an enchantment buff. Kimchi hasn't seen an update in about a year, but they were actively polling players on which content they'd like to see restored for some time and actually following through on it. https://github.com/kimjoy2002/crawl

Support for Kimchi master fork on Xtahua server (Europe)?
And in top of all that, makes hundreds of new additions, while regularly merging new changes from up to date DCSS versions. You can play as a Hydra that grows a new head every level and an amulet slot every other level until becoming the Lernaean hydra with 27 heads! How exciting and awesome is that? Please help finding a singleplayer, simulation/RPG/strategy game/mod with elaborate mechanics, that also could be played more casually - not interfering with work/family life? I present many somewhat obscure examples that almost fit the requirements.

Open-source roguelike Cataclysm: Dark Days Ahead has released v0.F stable.
I can personally recommend Kimchi if you prefer old DCSS. It adds back all the old races like for example sludge elves and mountain dwarfes, all the old classes and previously removed items.
