Which version of Processing should I learn if I want to plot my images with an Axidraw plotter?
I have made and exported SVGs from turtletoy. I've also written some SVG export stuff in Makelangelo software.

Generate Gcode form complex SVG
Makelangelo software loads a lot of SVG and can output Gcode for plotters. Try the latest nightly build: https://github.com/MarginallyClever/Makelangelo-software/releases/tag/Nightly

What tools / environment do you use for robot control UIs?
I use Java with IntelliJ. I used it for Makelangelo Software and I used it for Robot Overlord. I like that it's cross platform and I love how comfortable I am with the language. Technology is fast and people are slow... I've been doing this since before ROS/Unity. To switch now sounds painful. Still... I'm trying to learn Unity and it has some fun features.

Community projects/collaboration?
doh, forgot to link: https://github.com/MarginallyClever/Robot-Overlord-App/ is the big one I want to collab with others. https://github.com/marginallyclever/makelangelo-software/ for plotters is already taking off and doesn't need me to push it out of the nest any more.

I have two projects that I've been moving from java 8 to java 15. The first, https://github.com/marginallyclever/makelangelo-software/, has moved with minimal fuss. The second, https://github.com/marginallyclever/Robot-overlord-app, set up in the same way (maven) with as few changes in structure as possible... won't debug. The exact error is
