I tried Heimdall, Organizr and am currently using Dashy. Heimdall was easy to setup but I wanted a tad more customization. Dashy does that well, but is not too complex. Also has an status check to see what services are reachable which is a feature I really like.

Dashboard that can hide items based on authorization?
I am using Authentik's built in dashboard for this very purpose. That said I know Dashy has granular access support via keycloak https://github.com/Lissy93/dashy/pull/397
I would recommend dashy too, adding to the comment above, i recently made a PR https://github.com/Lissy93/dashy/pull/691 extending the granularity to individual items.
