Madmax plotter, Swar plot manager, and Plotman plot manager all support portable plots for pools now. Others probably do, but I'm not as familiar with them. Update to the latest versions for the best results, and double-check your configuration files as some settings may have changed since your last update. And you can also use plot managers with Madmax these days, if you want to take advantage of workflow management (multiple destination drives, parallel plotting on bigger plotters, less scrolly logs, etc).

The first way is to NEVER run Powershell scripts that you don't fully understand - if you come across a 'too good to be true' script, post it on communities like this one and get their feedback. There will no doubt be someone with much better understanding of the script's finer mechanics. Personally, I use only scripts that I have hand typed out myself, or ones that are reputable (e.g. Swar Plot Manager, Plotman) and NOT closed source.

Beginner looking for answers about pools, finding plot times and peers. Any help appreciated
I unfortunately don't know how to look it up when using the gui. I'm using plotman and it keeps logs around even after the plot finished. As i assume you are using windows, you could have a look at https://github.com/swar/Swar-Chia-Plot-Manager
