Are there places where I can find a master list of all games worth loading onto MiSTer?
The MiSTer wiki has a list of all the cores, but even that is incomplete when it comes to arcade.

Can you use a custom background when using the Analog output of a MiSTer?
Have you tried looking at the wiki? Especially the part under "To add a background image" where it says to press F1 after rebooting?

MiSTer FPGA latency question
Those are both incorrect. The lowest latency the MiSTer supports is about 4 scaliness (you can verify that here: https://github.com/MiSTer-devel/Main_MiSTer/wiki/Lag-Explained). The OSSC is maybe a single scanline at most. These are not even remotely the same as a frame of lag as there is no display available with a high enough frame rate for that to even approach a single frame of lag. That is less than 1 Ms of latency. They are described as "almost" lag free because it's technically not 0.0000000000 ms, but functionally 0.12 ms and 0.00 ms are the same and certainly nowhere close to the 16.6 ms that makes up a single frame (at the ~60 Hz refresh of the systems the MiSTer emulates).

I think you may have luck with the https://github.com/MiSTer-devel/Main_MiSTer/wiki FPGA based consoles that reversed engineered the electronics and now uses "Hardware Emulation" that should have NES SNES Genesis "cores" for download do some reaseach on FPGA and what consoles you can make music on I think the upcoming Analogue Pocket will have the ability to make your own music perfectly the same as GB,GBC. https://www.analogue.co/pocket a random request I have is can you also look into how to mix surround sound into Dolby Pro Logic as that can give you true surround sound with stereo. SNES and N64 Have Surround that way. DK country has separation of instruments in the score. all though this stereo magic. DPL II can do 5.1
