There's a charity called Special Effect who make specialized controllers for people with disabilities. If you like that sort of thing, go donate to them! They personally look at the needs of their clients and go through several tests and stuff with them. They do amazing work.

Are there ways to set up the controls for someone who only has one usable hand?
In the UK the organisation SpecialEffect (https://www.specialeffect.org.uk/) is dedicated to helping people with physical challenges to play games again. Check them out and maybe ask them if they know a simmilar organisation that is more local to your location.

GFs daughter has CP
I'd check out what https://www.specialeffect.org.uk/ do - they do a lot of work attempting to make all games accessible via custom hardware, it's amazing. And, like other commenters have suggested, Microsoft have their "Adaptive Controller" to make it easier to create custom controller setups for your GFs daughter's specific needs i.e. it allows you to add all sorts of different input modules via 3.5mm jacks. Sony were a little slower off the mark than Microsoft in this regard, but they've just this year announced "Project Leonardo", which is their entry into the accessible controller field.
- Xbox controller I designed a while back. Left shoulder shrug pulls the left trigger and right shoulder shrug pulls the right trigger. C6 quadriplegic. Just thought this might be a little inspiration for people out there.
