Flash the GameCube-specific firmware onto the ESP32 following this BlueRetro guide (just steps 1 and 2). At the time of writing, the latest firmware is 1.7.3 and the GameCube firmware was named BlueRetro_gc_external.bin (the other two files remain the same; just don't use the universal firmware as it requires extra wiring)
Referencing this schematic from BlueRetro, connect the 5V from player 1's extension cable to the 5V pin on the ESP32. Player 1's DATA line (labeled IO19) in the schematic, should be connected to the pin labeled 19 on the ESP32. (The labels from BlueRetro align with the pin labels on the actual ESP32 -- at least the one I bought from Mouser does). Connect the combined GND line for Player 1 to any of the GND pins on the ESP32. Leave the remaining lines (3V3 and the Pin 5 if it exists) disconnected.
