i haven't used this but have been thinking about using this https://github.com/seanap/Plex-Audiobook-Guide they have a list of players down towards the bottom of the page
I use Prologue with Audnexus agent on plex, and a library organized by Author/Book Name/Book Name - Subtitle.m4b.
I use bragibooks for MP3 -> M4B conversion despite the interface leaving a lot to be desired. Though seanap's guide works too. It's just a bit more manual.
