Caves of Qud is receiving a lot of love here, but not as much for Cataclysm: Dark Days Ahead! It's a randomly generated survival RPG with rogue-like elements, crafting, and has a lot of moddablity. It's so in-depth and has so many different playstyles that it's hard to describe. From creating your own mad-max-style death machine, taking care of farm animals and crops, to surviving in the woods.
