Yep, 16GB should be enough, so it's probably some memory access violation that happens at that moment of RAM usage spike. It's probably related to Unity engine more then Valheim specifically. I don't know how to troubleshoot this problem on Linux, but I would try adding PROTON_USE_WINED3D11=1 %command% in Launch settings, try Vulakn, giving Valheim more privileges and maybe disable some advanced memory management features in BIOS for CPU and RAM.
