I love Org over Markdown, and org-roam is like Roam crossed with Obsidian, but with Org mode.
you don't mention what about nv/nvalt you like so much, so hard to base recommendations but there are Joplin and Obsidian.md which are free notepad apps that do support graphics. Obsidian is my current go-to.

Seriously, once you get Emacs set up (which can be daunting, but I recommend Doom Emacs with this emacs-plus build), it’s a wonderful operating system without a good text editor.
‘Course, there’s an Emacs command to do that: Deft mode.

Throw in Spacehammer, and you can add a note from anywhere in the operating system.
