As far app compatability, the sandboxed Google Play Store is an option, which will allow you to get the best of both worlds of installing any app without giving it the permissions to collect your data. I'm using Google Maps without being signed in to a Google account and it works the same as it did on my other device. Installation of the Google Play Store was easy and it's something the developers even encourage as it's on their website: https://grapheneos.org/
