(Heads up, this first part is basically all stuff you’d have to buy materials for, if you’re not interested in projects that would require buying stuff, skip this paragraph) From there, it’s good to start with projects he wants to do and then piece out segments in manageable chunks. Open source projects like the spot micro (probably not a great example, there’s not much program out there yet, here’s a better one) are great ways to learn about complex systems while having almost everything already worked out for you, but they tend to be fairly advanced (and expensive depending on what projects you go for, notice this one requires a 3D printer, or some way to manufacture complex parts) so if you do go that route, be wary. You may have to help out. Getting him some servos, leds, sensors, jumper wire, and a breadboard are all things that would make for good learning projects if he’s interested in using the GPIO on the pi. Something like this or this. Kits like those do have the drawback of not coming together into a final piece that he can look upon triumphantly or show others, but make up for that in a wide array of new skills to learn.
