My solution so far was to do a Google Takeout, then I used a python script to order and fix the EXIF metadata for all my pictures/videos. (FYI, I had to convert a few MOV files to MP4 and apply a custom shell script to fix them but nothing major).
To synchronize the photos, I have used this docker image and I'll tell you a bit of what I have configured for those who'd want to do the same.
NOTE:
