z88dk or sdcc come to mind. I've only done things with z88dk though because it was easier to setup for the msx platform. sdcc has more optimization but i think these days you can use it under z88dk also. Good luck, this is fun! :)

Google pointed me at https://github.com/gt-retro-computing/llvm-I8080 as an 8080 backend but I have no idea what state that is in.
