Protect Video Timelapse in HD?
I've had great success with https://github.com/danielfernau/unifi-protect-video-downloader. Downloaded about 9 months of 8hr/day to do a construction timelapse.

Network storage with Dream Machine Pro SE?
I assume you are talking about the Protect video files being limited by the single hard drive in the UDM Pro SE. I have a cloudKey Gen plus so the drive is a 2.5". I put a 4 TB SSD in it which gives me about 30 days. For archival (90+ days) I independently record the RTSP streams to a computer that archives onto a Synology NAS with a couple of 12 TB spinners. It's not rocket science... just a bunch of bash scripts and ffmpeg. For a more professional method would check out this: https://github.com/danielfernau/unifi-protect-video-downloader

UniFi Protect is Trash - Ubiquiti should feel ashamed.
Motion events would at least make it function in a act of god event. As is, takes more or less a hack to get that data -> https://github.com/danielfernau/unifi-protect-video-downloader

Unify Protect is Not Enterprise Ready. Dont trust the UniFi Console "backups". Make sure you have Local Backups of your Configurations.
Not OP, but this is what I use for my UDMP. I don’t have an NVR to poke around, but you might be able to adapt it. https://github.com/aessing/unifi-udm-backup
