Another FOSS launcher is: https://github.com/nielsvanvelzen/tv-launcher made by some that develop the Android TV app for Jellyfin I believe.

There are things like https://github.com/codefaktor/FTVLaunchX but you’ll have to look for a solution tailored towards your generation of Firestick and OS since Amazon likes to fiddle around with things and make users’ lifes more difficult instead of easier.

I get the SAME damn recommendations all the time
I use FTVLaunchX and ATV Launcher Pro on my Android TV device. Just install those two apps and enable the accessibility service for LaunchX.

Adb for changing default launcher but can’t connect using xfinity wifi hotspot IP

Nvidia shield vs amazon fire tv stick
Agreed, I have a few Fire Sticks and I've had to disable autoupdates on them because Amazon proactively targets apps that customize functionality, eg. https://github.com/codefaktor/FTVLaunchX/issues/4
