From what I've seen in the past, ffmpeg doesn't retain the HDR status. I use a program called Tricycle to convert mine whilst retaining the HDR settings.

Ripping 4K HDR BD to HEVC retaining HDR info
I have used https://github.com/kmcclive/tricycle in the past and it works great. I have also used the other link recommended and it also works great. I like the fastflix because it shows you the cli command. Both are based on ffmpeg. For ease of use I recommend tricycle.

C# : FFmpeg (FFMediaToolkit) on linux System.IO.DirectoryNotFoundException: Cannot found the default FFmpeg directory
I have C# project in rider and FFMediaToolkit installed via NuGet. I made instance of MediaBuilder.
