First let's introduce the tool: Sorbet is a gem developed by Stripe that aims to bring type notation syntax and type checking support for the Ruby ecosystem by utilizing the "Gradual typing" philosophy, it also provide type generation from YARD comments via the tapioca gem, allowing to grow alongside the already built Ruby codebase.

Have you tried https://github.com/Shopify/tapioca with Sorbet? Typing in general has ways to go sure, but I find this combination quite usable in my day to day.

Can text editors detect undefined variables in Ruby?
Sorbet can do this, as long as you have type signatures for your code. Given Ruby's highly dynamic nature that's where tools like Tapioca come in to generate these, for example for Active Record models where instance methods are generated based on the database schema. But the moment when something returns T.untyped you're back where you were before - it helps but isn't perfect.

Open-Sourcing the Sorbet (Ruby) VS Code Extension
Regarding Sorbet and Rails, I recommend Tapioca [1].
The Rails app that I worked on had a few edge cases Tapioca didn't cover so I wrote a simple script to load the Rails app and generate RBI files (e.g. generate RBI definitions for fixture methods in ApplicationTestCase). The Tapioca codebase helped provide a path for that [2]. Tapioca also continues to add to their DSL compilers. The work to integrate Sorbet paid off very quickly.
Also, T::Enum and T::Struct are handy in any Ruby codebase.

New with Sorbet
I'm pretty sure sorbet-rails is just a rails-wrapper gem for the sorbet gem :-) (HAML does exactly same thing) and tapioca seems to be some convenience library to generate RBI (https://github.com/Shopify/tapioca)

Here's a real life example: Imagine a Ruby on Rails app on which a team of developers are working. The code is hosted on GitLab and all the work is coordinated using GitLab issues. In other words: For every commit, there's an associated issue and the issue number acts as a sort of primary key for documentation, time reporting and so forth. This convention has a few advantages, most notably the ability to easily learn more about how, when and by whom features were implemented as well as how this implementation came to be.

More control over enum in Rails 7.1
In Rails 7.1, a new option _instance_methods is introduced, allowing developers to opt-out of the automatic generation of instance methods for enums. When enum is defined with _instance_methods: false, Rails will no longer generate methods like pending?, processed?, etc.

Ruby on Rails load testing habits
Rails isn't super opinionated about database writes, its mostly left up to developers to discover that for relational DBs you do not want to be doing a bunch of small writes all at once.
That said it specifically has tools to address this that started appearing a few years ago https://github.com/rails/rails/pull/35077
The way my team handles it is to stick Kafka in between whats generating the records (for us, a bunch of web scraping workers) and and a consumer that pulls off the Kafka queue and runs an insert when its internal buffer reaches around 50k rows.
Rails is also looking to add some more direct background type work with https://github.com/basecamp/solid_queue but this is still very new - most larger Rails shops are going to be running a second system and a gem called Sidekiq that pulls jobs out of Redis.
