Hijack QMK output?

I hadn't heard of CharaCorder, looks interesting
If you're familiar with Plover, the Stenogotchi might be something you could look at as well, if the devices you're working with support bluetooth.
-
Can a Raspberry Pi easily emulate a bluetooth keyboard to control another device?
Yes. Check out https://github.com/Anodynous/stenogotchi

making a bluetooth steno keyboard? Run plover on a raspberry pi and then send the text output over bluetooth?
Definitely. The raspberry pi zero w is particularly well suited for this due to its small size and built-in bluetooth. You can take a look at my hobby project with this same goal in mind, the Stenogotchi, for inspiration.

My latest design, the proto3, now with a whopping 42 keys.
There are no easy/standard steno chords for typing keyboard shortcuts (e.g. Ctrl+S to save file). (I like to use [Emily's Modifier Dictionary](https://github.com/EPLHREU/emily-modifiers) for this.)
-
Can Plover be used to type formulas?
You can easily extend Emily Symbols to do whatever symbols you like. You can also use Emily Modifiers to take advantage of any keyboard shortcuts that exist in the editor you are using.
