Can't compile game

You're making it more complicated than it has to be. Install WSL (which docker desktop requires anyway) and follow the Linux instructions

I haven't tried that fork myself, but SM64EX works great.

The Linux port of Super Mario 64 runs fantastic on the Steam Deck! (GitHub sm64pc/sm64ex)

What is the current state of Nintendo 64 emulation?
Mupen64Plus and its ParaLLEl tech is the current state of the art, but it requires a decently powerful GPU and tends to lack on the UI side. The best ways to play it are either via M64P or RetroArch.

Mupen64Plus also has a standalone version with a more traditional desktop UI over at M64P, and Genesis Plus GX is also present in other multi-core emulator setups like BizHawk
