For Rime on MacOS the Squirrel input isn't being added to the list of input methods
You could try uninstalling any old Squirrel stuff you have, and installing the Cantonese Squirrel Rime directly: https://github.com/rime/rime-cantonese/releases

If you want an input method that supports inputting tones as well, I would suggest using RIME https://rime.im/ with rime-cantonese https://github.com/rime/rime-cantonese - but that is an installable input method, not a webpage.

Ubuntu newbee here how can I set hotkey for Chinese, japanese and english inputs?
As a native chinese speaker, I recommend you install rime. It's smart and basically support all kinds of chinese input methods. To install, refer to the ubuntu section of this page and install all the require package using apt. Then open the setting app, go to region & language and click manage installed language. First change the input method framework back to ibus in the "keyboard input method system" section. Then click manage installed language, select Installed/Remove language, tick the language you want to use (In your case japanese and chinese).

This is one of the motivations for an open source Chinese IME framework called RIME: https://rime.im There are configurations available for a number of dialects like Suzhou or Shanghai dialects so that users who prefer those languages don’t have to use Mandarin/putonghua pinyin.

best chinese input methods?
I highly recommend 中州韻輸入法引擎, an input engine that supports many Chinese (and non-Chinese) input methods. I only use Pinyin and Jyutping with it, but I'm sure there are ways to input Shanghainese phonetically too. An easy way to hand-write characters with your keyboard (also supported by this engine) is 五筆畫 (different from 五筆): see here for a quick overview.

Try the GB18030 version of 五笔86 - it does all characters, 冇、乜、龘、etc included. Specifically, you can have a look at This schema which is for the RIME input method.

Yes, all off one system. Basically, I'm using an IME called RIME, which is a chinese IME that lets you install schemas created by other people.
