If openconnect doesn't work and you need to use AnyConnect there's another option. https://github.com/vlaci/openconnect-sso is what my team and I are using.

VPN Split + DNS Split using systemd-resolved on Ubuntu 20.04
I use vpn-slice to only route through the VPN requests to client's IPs and domains, which are many, like mail.myclient.net, test.myclient.net, jira.myclient.net, etc. I use nslookup to get the IP address of each domain.

I dockerized the AnyConnect VPN client
Docker seems like overkill. Have you seen this? https://github.com/dlenski/VPN-slice. For DNS, I use dnsmasq, that way I can still use DNS for corporate hosts, and 8.8.8.8 for everything else.
What are some alternatives?
