How I archive miniDV tapes - a short guide
The subtitles, which are inside the .srt file we created earlier, are automatically embedded into the new file by StaxRip. I wanted them to be selected as the default option when the player plays the video so that I didn't need to go into the settings and turn on subtitles for each video. This can be done with the software MKVToolNix. In its default state, MKVToolNix cannot apply the same settings to multiple video files at once, but thanks to a guy from GitHub, we have a workaround for that! Another plus of using MKVToolNix is that it fixes a fault in StaxRip's encoder that causes it not to display video information like the framerate in programs like VLC (when you press CTRL+J). After MKVToolNix has remuxed the video, the information is shown correctly again.

Can I get plex to select the 2nd subtitle of the same language, instead of the first?
If your on Windows, check out this repo that gives instructions on how to use mkvtools to batch convert files. If you on Linux, youre probably able to code your own bash script using the bat script as a template.

MKV Muxing Batch GUI 2.0
In my experience the 'MKV Muxing Batch GUI 2.0' is a great tool that takes all the trouble out of working with 'option.json' files etc. But somehow for the files that I checked with, the 'MKV Muxing Batch GUI 2.0' tool removed some of the metadata tags that are not removed when using the batch process at https://github.com/Serede/mkvtoolnix-batch.

Video track language - MKVToolNix
There is no correct or wrong way. It’s just personal preference. Since Plex doesn’t care about those tags then there isn’t a way it needs to be done. I typically don’t do anything to the tags unless it involves subtitles. If you are on windows you can use this batch script to modify multiple files. Works great but test it first to see if it works for whatever you are looking to do.

I am running on windows. I currently use MKVtoolnix with a batch script to modify multiple files at once. Instead of doing each file one at a time.

HandBrake 1.7.0 – The open source video transcoder
Its literally a feature of all the underlying encoders. And you can do it even with exotic ffmpeg/vapoursynth filter chains. So I can't imagine why.
TBH I would just recommend Staxrip if you are on Windows: https://github.com/staxrip/staxrip
There is a linux equivalent, I can't remember what its called.
Or maybe some av1an GUI for Mac/Linux. All of these things support a target file size with many more features.

2-4: I use StaxRip to encode the video because it includes the QTGMC deinterlacer, which is from my research a very good deinterlacer that produces less artifacts in the video than other deinterlacers like the one included in HandBrake.

But I actually got through it and found a great solution for myself using StaxRip and an updated QSVEnc by Rigaya. Replace StaxRip's outdated QSVEnc with the updated Rigaya QSVEnc.
